Milhojas Mango and Goat Cheese Salad for 2 people

Ingredients:

– 1 medium mango

– 200 gr of goat cheese

– Brown Sugar

– Sugarcane syrup

Elaboration:

We peel the mango and cut it into slices of about 4 cm. Then we cut the goat cheese in slices of the same size as the mango. We proceed to assemble the plate, adding a mango sheet first and then we continue alternating with cheese. We finish with a sheet of cheese. Then we incorporate the brown sugar and we use a blowtorch to obtain caramel texture of the brown sugar that we have added. Finally we dress with sugar cane honey.
